1 1/2 cup baby arugula
1/2 medium grapefruit, cut into segments
1/3 cup fennel bulb , thinly sliced
1/4 medium avocado , sliced
1 1/2 Tbsp light balsamic vinaigrette dressing
2 Tbsp parmesan cheese, shaved
In a medium bowl, combine the arugula, grapefruit, fennel, and avocado. Drizzle with the vinaigrette; toss gently to coat. Top with the cheese.
